#39 Cheesecake

#39. Cheesecake

Chevre Cheesecake with Poached Cherries
Serves: one small tart pan
Preheat: 350
Ingredients:
Cheesecake Mix
    5 ounces goat cheese
    1/2 cup sugar
    1 teaspoon vanilla
    2 large eggs, separated
    2 tablespoons flour
Topping
    1/2 cup cherries pitted
    2 cups water
    1/3 cup sugar
    1 tablespoon of lemon juice
pinch of flour
Crust
    1/2 granola
    2 tablespoons brown sugar
    2 graham crackers
    2 table spoons almonds
    3 tablespoons butter softened
    pinch of cinnamon

 Directions:
    Combine water, sugar, and lemon juice in saucepan. Stir on low heat. Raise the temperature to a boil. Stir in cherries. Add pinch of flour for thicken ing. Reduce heat and simmer for ten minutes. Chill in the refrigerator for thirty minutes.
    Place graham crackers, granola, brown sugar, cinnamon, and almonds in a baggy. Crush (I used a hammer) until it is reduced to crumbles. Pour into a bowl and add softened butter and mix well. Lightly coat a small spring form tart pan with butter and pat down mixture. Cook for five minutes in the oven and remove to add mixture.
    Combine goat cheese, sugar, and vanilla into a bowl and beat together. Beat or stir in egg yolks. Beat in flour. In a separate bowl, beat egg whites until fluffy. Beat 1/3 of the fluffed egg white into goat cheese mixture and then fold in the rest. Pour into your spring form tart pan. Bake for fifteen to twenty minutes. Test with a toothpick or fork- if it sticks, it needs more time. Pour on topping and- bang- babay, you got a cherry cheesecake.

A New Year's Resolution

Welcome to my new year's resolution; cooking 101 new dishes I've never made before all from scratch). Actually, it was last year's resolution... but I'm back with some intestinal fortitude and recipe cards from Hallmark. I've been pumping out recipes day and nite. The cooking list I selected ranges from butter- which has one ingredient, to Chile en Nogada- which is supposedly one of the hardest dishes to make in the world. All dishes are made vegetarian; all card recipes are written with the appropriate carcass but I will let you in on what alternative I used. To the right is my recipe box. Some are worth hundreds of dollars, often given as a wedding present engraved with the lady's new initials. I got this one for fifty cents at a second-hand store- I think it'll hold up!
